Brasserie DuPont, Six or seven breweries make Saisons. The undisputed classic of the style is Saison Dupont. It comes from an artisanal brewery that is also a working farm (eggs are sold in the ‘executive’ offices!) and produces beers with exquisitely hand-made character, and unruly clumpy yeast. When Saison Dupont first arrived in this country, we had to do quite a bit of explaining about the look of the beer. The brewery has cultured their yeast for taste and aromatic qualities. Because Dupont basically only sells beer from the brewery, they haven't concerned themselves with developing a yeast that travels well. For the uninitiated, the look of the beer is daunting. However, the sweetest rewards await the adventurous.Saison Dupont is a delight to the taste buds. Snappy, yeasty, with a clean, bright quality. The Dupont brewery is run by Marc Rosier (brewer) and his sister (microbiologist). They also operate the farm, and are interested in sustainable agriculture. This has led to Foret, a Saison beer that is the first certified organic beer in Belgium. Foret is 5% abv, has the recognizable house yeast character, but it is more angular in its taste. Moinette is their homage to the Abbey Style. It is stronger and darker and richer than Saison Dupont. A favorite at our tutored tastings. Bon Voeux is the brewery’s rich Christmas ale

Brouwerij Bosteels, located in the village of Buggenhout, is a family-owned and operated brewery. On the same site since 1791, they specialize in unique beers which don't necessarily align with "normal" Belgian beers styles. Constantly innovating and improving, Bosteels is one of the best-known special brewers in Belgium.
Tripel Karmeliet While travelling in Belgium, we’ve been impressed with how many “competing” brewmasters cite Tripel Karmeliet as one of their favorite Tripels. It’s rapidly attaining status as one of the new classics of the Belgian brewing scene. Brewed with oats, barley and wheat, Tripel Karmeliet has soft, full, rich grain character with hints of banana, vanilla, and a slight, pleasing bubble-gum aroma. A restrained hop bitterness offers perfect balance and a gentle counterpart to its substantial maltiness. 8% ABV Available in 11.2oz; 750ml and 30L kegs.
Pauwel Kwak Kwak is rich amber in color with a slightly sweet, generously malty character. Hops are subdued, but present a well-considered balance with the juicy ripeness of grain and a fruity, meringue softness. The special Kwak glass is hard to miss in Belgium. DeuS Brut des Flandres Deus undergoes a lengthy, costly maturation in the Champagne caves of France. The elegant and labor-intensive "methode Champenoise" produces the best sparkling beverages in the world. DeuS has characteristics of both sparkling wine (fine, velvety carbonation) and specialty beer (rich maltiness) but also exhibits a fragrant, herbal and spicy character quite unique and special. Flavors of anise, mint, malt, lavender, and a barely perceptible hoppiness make DeuS a very sophisticated treat. 11.5% ABV Sold exclusively in 750ml bottles.

Browerij Boon, Frank Boon, who started as a blender, is considered by many to be the leading revivalist Lambic brewer in Belgium today. Boon is remarkable for making completely traditional products, and yet having the softest and most drinkable Lambics. They are tart and crisp, but with none of the acidic bitterness that some of the traditional brewers have made their mark of authenticity. Boon believes that Lambic does not have to be harsh to be genuine. His Lambics are 100% spontaneously fermented beer. He uses only whole fruits for his Kriek and Framboise, without the addition of syrups or extracts. His Marriage Parfait Vintage Lambics are blended from the best casks from outstanding years.

 One of the most interesting breweries in all of Belgium or Holland has got to be Urthel. The world-class beers are designed and brewed by Hildegard Van Ostaden and the artwork and packaging are creative masterpieces of her husband, Bas. Together they have become two of the most well-known and liked of all Belgian brewers in the United States, frequently taking part in festivals and events and can almost always been seen together, trying new beers and meeting new people.
Since autumn of 2006, all of Hildegard's beers have been produced at Koningshoeven in Tilburg, Holland.
Hop-It Hildegard returned from the Anchorage Barleywine Festival inspired by the wonderfully hoppy beers she tried there. Barleywines, IPA, Double IPA and all manner of over-the-top beers sparked her creative impulse and the result is Hop-It. Brewed with only one malt (pils) and three hops (Saaz, Styrian Goldings and Magnum), it's a truly unique beer for hop lovers.
Pale golden in color with billowing white foam, the nose is mildly hoppy and spicy. On the palate, it's very hoppy and intoxicatingly bitter but curiously well balanced. The malt and hops intertwine in a beautiful expression of complexity, contrast and complementary flavor.

Urthel Samaranth Quadrium Ale When Bas and Hildegard were married, they did not serve wine at their celebration, they served a special strong beer brewed by Hildegard to commemorate the occasion. It was Samaranth and was inspired by the Quadrupel of Koningshoeven and other big, malty special beers of the Trappists.
The beer was such a hit that it has been in the selection ever since. Dusky, deep brown in color with a slightly off-white foam. In the nose, it's sweet and faintly spicy with notes of dried fruit, nuts, chocolate, and marzipan. On the palate, it's big and bold, massively malty and slightly warming from the alcohol. It is long and shockingly dry in the finish.

Urthel Hibernus Quentum Tripel Ale Urthel Tripel was originally a seasonal winter beer, but has since been added to the line-up full time. Like all of Hildegard's beers, it's a highly idiosyncratic member of the Tripel family, unlike any other. On the nose it's slightly spicy and faintly herbal, with a definite bready character. The flavor is well-spiced and hoppy, with a big creamy mouthfeel. It's moderately-long finish is sweet and herbal, with echoes of hops.

Urthel Vlaemse Bock Once again, a highly idiosyncratic offering from Hildegard. Called Bock as a nod toward the familiar German style of that name, this beer has much more in common with a Dubbel. The word "Vlaemse" is rough slang for "Flemish" and should give the drinker a clue about the beer. Indeed, Hildegard seems to imply that Dubbel is the Bock of Belgium.
Dark russet in color with a faintly tan rocky foam. Spicy and slightly hoppy in the nose, with familiar herbal overtones present to some degree in all Urthel beers. The flavor is surprisingly dry and hoppy, with beautiful cocoa and nutty flavors. Enjoy this beer with sauerkraut and sausages for a pan-European festival.

Wallonia is the French-speaking part of Belgium and the province where Scaldis is made is called Hainaut. The word means "Land of groves" and indeed it is the richest agricultural province in the country.
The Dubuisson brewery is in the hamlet of Pipaix, outside of Tournai. The brewery has been in operation since 1769. Scaldis (Bush at home) is 12% alcohol by volume. High gravity beers are generally quite heavy and sweet. Scaldis by contrast is quite dry with a pleasant nutty finish.
Scaldis is brewed without evaporating or freezing out water. Its alcohol level is achieved only by fermentation. Three different malts go into Scaldis, making it a beer with as much nuance as warmth.
Belgians are not big consumers of spirits such as cognac or brandy. Instead Belgians frequently enjoy full bodied beers, like Scaldis, before dinner as an aperitif or after dinner as a digestif. Scaldis should be served close to room temperature (6o°). At this temperature the roasted quality of the barley, the kettle-seared sugar flavors, and the clean hop finish truly bloom. Scaldis has a memorable warming quality.

This ale weighs in at 12% abv but is in no way cloying or sappy sweet as most other brews with this potency. Scaldis has a nutty, lightly sweet malty bouquet and flavor with a warming, complex dry finish. It is this dryness that makes this beer so drinkable and so deceiving. The Slaghmuylder Brewery is unique in more that a few respects. It is the only surviving brewery in a town of 12,000 people that less than a century ago had thirteen of them. The brewery boasts a functioning steam engine, Anheuser-Busch kegs (left behind after the American troops departed Ninove at the end of World War II), and makes the only beer brewed by a layman ever permitted to use the “Trappist” designation on the label.
Today the handsome 135 year old brewery and adjacent museum (in which the aforementioned relics are kept) is overseen by three cousins who are descendants of the founder Emmanuel Slaghmuylder, a grain merchant turned brewer. The Slaghmuylder cousins brew Witkap Singel (the formerly “Trappist” beer) according to a recipe first developed at the Drie Linden brewery (in nearby Brasschaat). The Slaghmuylders took over Drie Linden in 1981. The brewer there was instrumental in developing many celebrated beers for Trappist monasteries. He was so beloved by the Brothers, and his contributions were so valued, that they conferred on him a special honor. For the duration of his life, his Witkap beers (made at his own brewery) would be allowed to carry the “Trappistenbier” (Trappist Beer) designation. We are importing Witkap Singel (known as Stimulo in Belgium), the most celebrated of the brewery’s beers. Today it bears the “abbey” designation.
Singel refers to the density (light) not the number of times the beer is fermented. lt is twice fermented, once in vat and once in bottle. It is the lightest of the Trappist style beers and is typically drunk at the midday meal.
Witkap has a very high fermentation temperature (22 degrees Celsius). It is held at this temperature for five days. The beer is aged for four weeks at 5 degrees Celsius. The beers are then centrifuged. At bottling, Witkap is dosed with candi sugar and new yeast. It is a blonde beer that sparkles like champagne. It has an extremely estery nose with typical abbey notes of banana and berry. Unusually, this is followed by a light body and lemony finish. Overall the effect is something one could describe as an abbey lager. Witkap is one of the least well-known of our beers, yet is invariably a surprise hit at tastings. Well worth seeking out. De Proef Brewmaster's CollectionUnique Expressions of the Brewmaster's Art In 1996 highly regarded brewing engineer and professor, Dirk Naudts, created De Proef Brouwerij in the village of Lochristi, near the historic city of Gent, Belgium. The ultra-scientific brewery blends modern equipment and technologies with traditional brewing methods. Each beer is crafted in an 11 hectolitre (9 U.S. barrel) brewhouse that Michael Jackson once described as "the ultimate toy for the aspiring homebrewer."
The flexible nature of the brewery enables Naudts to create an impressive range of traditional and not so traditional ales. His ability to design and brew unique products is showcased in the De Proef Brewmaster's Collection.
Signature Ale - Brewmaster's Collaboration with Tomme Arthur A unique collaboration with noted San Diego brewer Tomme Arthur. A complex hybrid of aggressively hopped west coast IPA, combined with traditional Belgian brettanomyces fermentation. Yves Castelain, the proprietor and grandson of the founder of the brewery, is a central operative in the revival of artisanal brewing in France. He is doing this against a backdrop where more than 90% of the beer consumed is made by industrial brewers. We bring in three beers from this brewery: St. Amand is a traditional copper colored Biere de Garde, with a grassy earthy aroma and a hint of licorice.
Castelain is the classic example of the rare blonde Biere de Garde. Castelain has a sweet palate. Many beers that are sweet and malty have a tendency to be insipid. Castelain, on the other hand, has a great deal of finesse. Jade is the only certified organic beer in France. The ingredients are artesian well water, Perle and Aurora hops from Austria, and Springtime Tremois malt from Belgian Flanders. Like the brewery’s other beers, Jade is filtered, but not pasteurized. It is medium-bodied, golden, grassy, but with an augmented hop nose and lower alcohol content (4.6% vs. 6.0% by volume) compared to Castelain and St. Amand. Experts’ Opinion

UNIBROUE beers are different. Brewed using an age-old process of in-bottle refermentation (with the exception of the U, U2, and La Bolduc), they are only partially filtered rather than totally filtered (which is the norm in today¹s beer industry). This means Unibroue beers keep all their protein and part of the yeast, producing a genuine upscale beer. These beers are on fresh lees. The lees deposit themselves at the bottom of the bottle as result of refermentation and natural carbonation. The process is the same as with champagne; except with champagne, the yeast is removed, while with Unibroue beers the lees are left in the bottle. This method gives a very particular taste to the beer and provides a natural source of vitamin B. Every single beer is brewed in one batch and is not water-softened.
Blanche de Chambly has an alluring pale golden color, effervescent foam and a subtle bouquet of spice and citrus notes. It is a mildly malty, sightly sweet and refreshingly thirst-quenching. Since April 1992 (blahsnh-deh-shahm-blee) White Ale 5% ABV
Maudite has a deep amber-red color with a rocky foam head and an appealing aroma of wild spices and floral hop notes. It is spicy, vinous, and deliciously complex with a crisp hop finish. Since May 1993 (moe-dzit) Strong amber-red ale 8% ABV
La Fin du Monde has a brilliant golden color with vigorously effervescent foam. It is midly yeasty with a complex palate of malt, fruit and spice notes followed by a smooth, dry finish. Since July 1994 (la-faeh-doo-mohnd) Strong triple-style 9% ABV
Trois Pistoles has a dark brown color topped with a rich foam mousse. Its slightly sweet taste is enhanced by accents of roasted malt, cocoa, ripe fruit and dark spices with a smooth finish like an old port. Since May 1997 (trwa-pee-stole) Strong dark ale 9% ABV
Don de Dieu displays an appealing orange-golden hue with a stable, creamy head of foam. Its fruity, malty and yeasty flavor is quickly succeeded by a palate-warming finish of roasted nuts and spices. Since November 1998 (dohn-deh-dyeuh) Triple wheat ale 9% ABV
Éphémère apple has an alluring pale golden color, effervescent foam, and a mouth-watering bouquet of Granny Smith apples and spices. It is slightly sweet, slightly tart and refreshingly thirst-quenching. Since March 2002 (eff-eh-mehr) White ale 5.5% ABV
Seigneuriale has an opaque amber color and spirited effervescence. Its floral, spicy and yeasty bouquet reveals a complex flavor of citrus, malt and ripe fruit undertones with a dry, hoppy finale. Since January 2005 (seen-yur-ree-al) Strong amber ale 7.5% ABV
Chambly Noire has an opaque black color with beige-colored foam. Its roasted malt character is complemented by spicy, mildly smoky notes and a suprisingly clean, dry finish. Since August 2005 (Shahm-blee-nwar) Black ale 6.2% ABV

McAuslan Brewing began operations in January of 1989. Located at 4850 St-Ambroise Street in Montreal's St-Henri district, it has established itself as Quebec's foremost micro-brewery.
The brewery launched its first beer in February 1989. St-Ambroise Pale Ale was an immediate success. Its distinctive hoppy-ness and clear reddish hue set it apart and gained it an instant following. Shortly after, McAuslan Brewing became the first micro-brewery to offer its product in bottles.
Since that time, McAuslan Brewing has steadily expanded both its brewing capacity and its place in the market. In the ten years since launching St-Ambroise, the brewery has introduced four new beers: St-Ambroise Oatmeal Stout in December of 1991; the Griffon brands, Griffon Extra Pale Ale and Griffon Brown Ale in April of 92; and Frontenac - first test-marketed in the Quebec-City area in November 1995 and then launched province-wide in April 1996.
In June 1997, the brewery launched a family of seasonal beers. The four beers are brewed exclusively in season and include: Apricot Wheat Ale, brewed in the spring; Raspberry Ale, available during the summer months; Spiced Pumpkin Ale for the fall; and Strong Ale, for the winter.
In 1998, McAuslan, in conjunction with Verger du Minot, began distributing cider on draft. Mystique Cider in bottles was launched the same year.
McAuslan Brewing is essentially the result of president Peter McAuslan's belief that he could brew a better beer and that Quebec consumers would provide a loyal following for it. Although he had been brewing his own beer for more than 25 years, it was only during the early '80s that he began seriously considering going into commercial brewing. In August 1987, he left his position as a senior administrator at Dawson College and dedicated himself to turning his vision into reality.
The next year was spent consolidating funding, acquiring expertise and equipment, as well as gathering a team of people with the skills and temperament to make the venture a success. An English brewmaster was hired to develop the recipe for St-Ambroise and he along with Ellen Bounsall, a biologist who trained as a brewmaster, set about the important task of establishing the brewery's reputation for distinctive beers that have since been acknowledged by critics internationally as being among the world's best. The brewery's beers have now won over 12 medals in international competition including a platinum medal, a gold, five silvers and one bronze.
Although the staff at McAuslan Brewing has expanded from five to 40 people, the brewery retains its character as a business on a human scale and with a human face. McAuslan Brewing's commitment to being active in the community has been affirmed as the company has grown. Critical to this has been the company's support of the arts, community events and charities that are a vital part of the social fabric of the communities in which its products are sold.
At the World Beer Championship in 1994, St-Ambroise Oatmeal Stout received the second highest rating of the over 200 beers in the competition and won one of only nine platinum medals awarded. Brewed from 40 percent dark malts and roasted barley, this intensely black ale carries strong hints of espresso and chocolate. Oatmeal contributes body and a long-lasting mocha-colored head to this well-hopped beer.

St-Ambroise Pale Ale is the brewery's flagship beer. Introduced in February 1989, it is a hoppy, amber, full-flavoured ale. In The Simon and Schuster Pocket Guide To Beer , beer critic Michael Jackson gave it three stars and described it as: "An outstanding ale... amber-red, clean and appetizing, with a very good hop character, from its bouquet to its long finish. Hoppy, fruity, and tasty all the way through."

The Weihenstephan Story: The Finest German Beer
The Bavarian State Brewery Weihenstephan: Nearly one thousand years ago it was the monastery brewery of the Benedictine monks, then the Royal Bavarian State Brewery.
Today, as a regulated enterprise of the Freestate of Bavaria, it is a company run according to the precepts of private business. As the oldest existing brewery in the world, our brewery occupies an exalted site atop Weihenstephan Hill in the Bavarian city of Freising, surrounded by the comparatively still very young Weihenstephan science centre of the Technical University of Munich.

Nothing refreshes you more than this naturally cloudy wheat beer with its wonderful yeasty fragrance and taste. Goes well with dishes that do not have too intensive a flavor, especially that Bavarian speciality 'Weisswurst' or white sausage.
